This was a special birthday even though it wasn’t mine. I had just gotten a job and was told there was a conference I had to go to at our local headquarters, which was in my home town. This trip happened to fall during my Dad’s birthday weekend, which meant I could see my family before my meetings. I don’t know how long it had been since I had spent his birthday with him-let alone as an adult and a professional adult.

So, I get there and my dad tells me he was thinking of having a small party with the family. This was my chance to throw my dad a birthday party so I had to do it right!

I went into hardcore party planning mode. I just made what I knew: pico de gallo, guacamole, burgers, etc. And as my family started to trickle in, I was there chopping vegetables like crazy and running around getting everything ready and looking.

Everything turned out great and by the time I started relaxing and eating everyone was having a good time. More importantly my Dad seemed so happy. He was able to celebrate his birthday with his family and everyone important to him was there. It was a proud moment for me and I think back to it with so much fondness. Moral of the story is if you want a salsa recipe for a last-minute party that’ll be a crowd pleaser-pico de gallo is the way to go!

Paloma’s family loved the pico de gallo and had a great time celebrating her father’s birthday.

Pico De Gallo:

  • 3-5 tomatoes-diced
  • 1 yellow onion-diced
  • 2-4 jalapenos-diced (depending on how spicy you like things)
  • ½ cup of chopped cilantro-diced
  • the juice from one lime
  • Salt to taste
